Brunch: Gnocchi with Poached Eggs and Fries

Home alone and trying to find something good to eat. I dug through the fridge and found a couple of things. First, some wonderful white truffle butter. Ooh la la. Makes everything better! And some chiffonade (pretentious enough?) basil on the bottom. Eh, just cut basil. Then I went off to poach some eggs. A pan of water right under simmering. Add a splash of vinegar to help. Spoon the water on top of the eggs if it is exposed. Just a couple of minutes for the whites to cook leaving the yolk runny and beautiful. Boiled up the last of my butternut squash gnocchi I made in the winter. Boil water. Add salt. Put gnocchi in. Boil until it floats. Scoop out and mix with butter and basil. Mmm, gooey truffle butter sauce. And adding to the simple decadence, the poached eggs. And since I didn't think I had enough carbs, some sweet potato fries. Frozen then heated up on the toaster oven until crispy. I know boring right? Whatever. Laziness.
