As an adult, I've come to really love brussel sprouts. Why? Well, my palate has changed and I also know how to cook them now. You don't boil them like crazy. That just makes them really bitter and mushy. Instead, roast them in the oven. You don't even need bacon. Just oil, salt, and pepper on halved sprouts. Into the oven at 375oF for about 30 minutes until caramelized.
See that below? It's not burned. It's charred into a delicious flavor. So good, I can eat these like popcorn. Who ever thought I would rave about a vegetable one day, especially a cabbage.
