Lunch Week 33 & 34: Roast Beef and Turkey Sandwiches

So every Sunday, I head over to the kitchen to whip up a big batch of food for lunch the next week. Yes, I brown bag. And I almost always do it every week unless I become too busy to even buy cold cuts from the deli. I do it for several reasons being health, finance, and laziness. Now, you may think that spending hours on a day off to prep and cook five meals at once is hardly lazy. But let me remind you, I hate it when the time comes to decide what to eat for lunch every day. I work in Midtown so the choices are endless. My problem, the more choices, the harder it is for me. So it's much easier for me to have my lunch ready and already decided.

So my lunch for the last 2 weeks: Roast Beef Sandwiches and Turkey Sandwiches
I've been so incredibly busy the last 2 weeks and didn't have time to cook at all. Sandwiches were the easiest thing for me to make. Everything is pre-made and takes only 5 minutes to assemble.

I would love to make my own roast beef but I don't have anything to slice it really thin the way I like it. Should I invest in a deli slicer? Maybe. It certainly has crossed my mind. Or maybe just a really sharp slicing knife. Probably the latter. Anyway, the roast beef sandwiches were made simple with horseradish and hot mustard as the condiments while cheddar cheese, lettuce, red onion, and tomato were the garnishes. I loved the spicy, nostril clearing taste of the horseradish. It's a perfect pairing with the hearty beef. Everything was layered on a kaiser roll that held up nicely to this hefty sandwich.

The turkey was very similar but the condiments were honey mustard and mayo while I used swiss instead of cheddar. The lettuce, tomato, and red onion remained the same.  Again, I would have loved to make my own turkey deli meat by roasting some turkey breast. But I didn't have any time and I can't slice it thin enough to my liking.
