Lunch Week 35: Asian Sloppy Joes with Egg Crepe

So every Sunday, I head over to the kitchen to whip up a big batch of food for lunch the next week. Yes, I brown bag. And I almost always do it every week unless I become too busy to even buy cold cuts from the deli. I do it for several reasons being health, finance, and laziness. Now, you may think that spending hours on a day off to prep and cook five meals at once is hardly lazy. But let me remind you, I hate it when the time comes to decide what to eat for lunch every day. I work in Midtown so the choices are endless. My problem, the more choices, the harder it is for me. So it's much easier for me to have my lunch ready and already decided.

So my lunch for the week: Asian Sloppy Joes with Egg Crepe

So it looks like I'm even more behind on my lunch posts than I thought. I've been slacking, haven't I? Sorry about that. So here are the missing lunch posts from the past few weeks.
For this week, I made Asian sloppy joes with egg crepe. This is something completely from my childhood. It's comfort food. Although I changed a few things here (I added more vegetables for health reasons) but the idea is the same.

The first prep is cleaning and chopping all the vegetables like onions, carrots, and garlic.
And just because I had it in the refrigerator, a head of broccoli.
And the ground beef. I used a very lean percentage as the fat isn't really needed here.
First saute the harder vegetables like the onion and carrots.
Then add the beef and cook through completely.
Add the broccoli and frozen peas as well. Then add stock or water until just covered. Add soy sauce (both dark and light) and taste of seasoning. Simmer until everything is just cooked through.
Ladle over white rice and add an egg crepe on top. I did a scallion egg crepe and super thin to make sure it's not too much.
The version I had as a child growing up was just ground beef and peas over rice. I loved it and gobbled it up. But I added more vegetables and an egg crepe on top because why not? This is one hearty meal. It's not for those looking for a light meal.
